Wheat Flour Bhatura Recipe: Make Soft and Fluffy Bhaturas Without Refined Flour

Chole Bhature is a favorite dish for many people. Traditionally, bhaturas are made with refined flour (maida), but nowadays many prefer healthier alternatives. Using wheat flour instead of maida can give you a similar fluffy texture while being slightly better for digestion.

With the right ingredients and technique, you can make soft, light, and perfectly puffed wheat flour bhaturas at home. Here is the step-by-step recipe.


Ingredients

  • 2 cups wheat flour

  • 2 tablespoons semolina (suji)

  • ½ cup curd (yogurt)

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon sugar

  • 1 tablespoon oil

  • Lukewarm water (as needed)

  • Oil for deep frying


Step-by-Step Method

1. Prepare the Dough

Take a large mixing bowl and add:

  • wheat flour

  • semolina

  • salt

  • sugar

  • baking soda

Mix all the dry ingredients well.


2. Add Wet Ingredients

Add curd and 1 tablespoon oil to the mixture.
Gradually add lukewarm water and knead the mixture into a soft dough.

⚠️ Do not make the dough too stiff. A soft dough helps bhaturas puff up better.


3. Rest the Dough

Apply a little oil on the dough, cover it with a cloth, and let it rest for 1–2 hours.

Resting helps the dough slightly ferment, making the bhaturas softer and fluffier.


4. Shape the Bhaturas

After resting:

  • Knead the dough lightly again.

  • Make small lemon-sized balls.

  • Roll each ball gently using a rolling pin.

Tip: Do not roll them too thin, otherwise they may not puff properly.


5. Fry the Bhaturas

  1. Heat oil in a deep pan on medium-high heat.

  2. Carefully slide the rolled bhatura into the hot oil.

  3. Press lightly with a spoon so it puffs up.

  4. Fry until golden brown on both sides.

Remove and place on a plate.

Serve hot bhaturas with:

  • Chole (spiced chickpeas)

  • Pickle

  • Sliced onions
