Make Sweet and Sour Guava Papad This Winter: A Quick and Delicious MasterChef-Style Recipe

Just the name “Aam Papad” brings back childhood memories of buying those sweet-and-tangy sheets for one or two rupees on the way home from school. While mangoes are out of season in winter, guavas are at their best—making this the perfect time to try something new: guava papad. Just like Aam Papad, this sweet-and-sour guava version will be loved by both kids and adults. It’s a great winter treat, easy to store, and quick to prepare.

Guava Papad is not only delicious but also a healthier alternative to heavy sweets when eaten in moderation. And the best part? It takes only 15–20 minutes to make and uses simple, everyday ingredients. In earlier times, roasted guavas were eaten to soothe coughs and throat irritation. Today, we can enjoy their goodness in this fun, nostalgic dessert.

Ingredients for Guava Papad
• 500 g ripe guavas
• 1 cup sugar
• 1 tablespoon lemon juice
• ½ teaspoon red chilli powder
• 1½ teaspoons black salt
• ½ teaspoon white salt
• 1 teaspoon butter
• A few drops of pink edible colour (optional)

Recipe: How to Make Guava Papad

  1. Wash the guavas and cut them into halves to check their quality inside.

  2. Add the guavas to a pressure cooker with half a cup of water and cook for two whistles. Allow them to cool completely.

  3. Once cooled, grind the guavas into a smooth puree. Strain the puree to remove seeds and fibers.

  4. Transfer the puree to a pan. Add sugar and cook on medium heat, stirring continuously until it starts to thicken. The colour will turn slightly glossy and translucent.

  5. When the mixture begins to leave the sides of the pan, it means the base is ready.

  6. Add black salt, white salt, chilli powder, lemon juice, and food colour. Cook for a few more minutes until everything blends well.

  7. Grease a plate or tray lightly with butter.

  8. Spread the hot guava mixture on the tray using a knife, keeping it slightly thick like a roti.

  9. Let it cool under a fan or leave it untouched until it sets firmly.

  10. Once set, touch it to check the texture. Cut it into long strips and roll them up. Your guava papad is ready to enjoy.
