Winter Food: Not just corn bread… you can make many tasty dishes from corn flour

During winter, your diet should include foods that nourish the body and also keep it warm from within. For this, adding a variety of grains is helpful. Corn is known to provide warmth. Most people make corn bread, but corn flour can be used to prepare many more delicious and healthy winter dishes. Here are some tasty recipes you can try.

Nutritional value of corn
According to the US Department of Agriculture, corn contains protein, fiber, calcium, magnesium, phosphorus, potassium, vitamin C, thiamin, riboflavin, niacin, folate, vitamin A (beta carotene, alpha carotene), lutein, zeaxanthin, and essential amino acids.

  1. Makki ka Dhokhala (Dhokla)
This is a traditional winter recipe from Rajasthan. It is made using simple spices and fresh green fenugreek leaves. The mixture is shaped like a medu vada and then steamed. It is best enjoyed hot with dal, chutney, and a drizzle of desi ghee. Hot Makki ka Dhokhala tastes truly amazing.

  2. Maize Raab
If you want a warm, comforting dish for winter, maize raab is perfect. Even small children can eat it easily. It is a soup-like preparation made by lightly roasting corn flour, then adding yogurt, spices, and water, and cooking it until it thickens.

  3. Corn Nachos
Kids love nachos, and you can easily make them at home using corn flour during winter. This is also a great snack for people on a gluten-free diet. You can mix a bit of wheat flour and rice flour with the corn flour. Then add baking soda, a little ghee, basic spices, and curry leaves, and knead into a dough. After resting it for a while, roll it out like a roti and cut into nacho shapes. You can bake, air-fry, or deep-fry them (deep frying will increase the fat content).

  4. Corn Flour Dhebra
To make Dhebra, mix wheat flour with corn flour and add coarse ginger, garlic, and green chili paste. Add oil, salt, chopped fenugreek leaves, and spices. Grate some boiled potatoes into the mixture and knead into a soft dough. Roll out like a paratha, cook on a pan, and serve with chutney. Sprinkling sesame seeds on top makes the Dhebra even tastier.

  5. Corn Flour Pudding
Corn flour pudding is a delicious winter sweet. First, roast the corn flour in pure ghee until it turns aromatic. In another pan, heat water, add sugar and cardamom powder, and bring it to a boil. Add the roasted corn flour and cook until it thickens. Drizzle ghee on top and garnish with chopped nuts like almonds and cashews. If you use ghee in the same quantity as the flour, the pudding tastes even richer.
