Ingredients Needed:

  • 1 cup semolina (rava)

  • 15–18 dates (for natural sweetness)

  • 1 cup milk (dairy or plant-based)

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ cup curd

  • ¼ cup oil (olive oil can be used for a healthier option)

  • Chopped dry fruits: almonds, walnuts, cashews, raisins, chironji (2 tablespoons)

  • 1 teaspoon vanilla essence

  • A pinch of salt


Step-by-Step Recipe:

1. Prepare the Dates

Remove seeds from the dates and soak them in warm milk for at least 30 minutes. This softens them and makes grinding easier. After soaking, grind the dates into a smooth paste using a mixer.

2. Prepare the Cake Batter

In a bowl, mix curd, oil, and vanilla essence until smooth and creamy. Add the date paste. If you want extra sweetness, you can include pure honey or jaggery.

Sift baking powder, baking soda, and a pinch of salt with the semolina in a large bowl. Gradually fold in the curd and oil mixture to form a smooth batter. Avoid over-mixing. Cover the batter and let it rest for 20 minutes.

3. Add Nuts and Adjust Consistency

After resting, check the batter. If it feels slightly dry, add 2–3 tablespoons of milk to adjust the texture. Mix in chopped nuts, keeping some aside for sprinkling on top.

4. Bake the Cake

Preheat the oven to 180°C (356°F). Grease the cake mold with butter and pour in the batter. Sprinkle the remaining nuts on top. Bake for 30–35 minutes. Check doneness with a toothpick or knife—if it comes out clean, the cake is ready.
