When you run out of vegetables, don’t worry—here's a quick and tasty dish that requires minimal ingredients and can be prepared in just 10 minutes. Introducing Marwari-style Papad ki Sabzi, a delightful curry made from papads and a few basic spices.

Ingredients:

  • 6-7 papads

  • Finely chopped onions

  • Chopped tomatoes or tomato puree

  • Green chillies

  • Ginger-garlic paste

  • Curd (yogurt)

  • Cream

  • Basic spices: red chili powder, coriander powder, turmeric, cumin seeds

Preparation Steps:

  1. Heat oil in a pan and add cumin seeds, red chili powder, coriander powder, turmeric powder, and chopped onions. Sauté well.

  2. Add ginger-garlic paste and sauté till aromatic. Then add tomato puree and cook until oil separates from the masala.

  3. Lower the flame and mix in curd carefully to avoid curdling. Add 2 spoons of cream and mix well.

  4. Roast the papads lightly in oil until crispy, then break them into pieces.

  5. Add the papad pieces into the curry and mix gently. Garnish with coriander leaves.

Serve with roti or rice. This flavorsome and comforting dish is perfect when you don’t have fresh vegetables and takes very little time to prepare.

Tips:

  • Use a low flame when adding curd to avoid splitting.

  • Adjust spices according to taste.

  • You can also toast papads on a tawa (griddle) instead of frying for a lighter version.

This easy, hearty dish is a great solution to curb hunger with pantry staples and enjoy traditional Indian flavors even on a vegetable-less day.
