Ingredients

Fresh amla (gooseberries)

Salt (as per taste)

Vinegar (enough to coat)
Method

Wash the amla thoroughly and let them dry completely.

Cut the amla into small pieces and remove the seeds.

Put the pieces into a clean, dry glass jar.

Add salt and vinegar and mix well.

Close the jar and keep it in sunlight for 7–10 days.

Open the jar once daily and stir with a clean spoon.
Salt and vinegar act as natural preservatives, allowing this pickle to stay fresh for months—sometimes even a year—without refrigeration.
