Make Market-Style Soan Papdi at Home: Follow This Easy Step-by-Step Recipe

Soan Papdi is one of those traditional Indian sweets that looks incredibly delicate but can be surprisingly tricky to prepare at home. Its signature flaky, thread-like texture comes from repeatedly stretching and folding a cooked sugar mixture with a roasted flour blend.
With Raksha Bandhan approaching on August 28 and Janmashtami following soon after, this can be a great homemade sweet to prepare for family and guests.
Ingredients You’ll Need
For the flour mixture
- 1 cup all-purpose flour
- ⅓ cup gram flour (besan)
- 1 cup ghee
For the sugar syrup
- 1 cup sugar
- ¼ cup water
- 1 teaspoon lemon juice
For assembling
- Roasted and chopped almonds
- A little ghee for greasing
Step 1: Prepare the Flour Mixture
Heat the ghee in a heavy-bottomed pan over low heat.
Add the all-purpose flour and gram flour and begin roasting them slowly. Keep stirring continuously so that the mixture doesn't burn.
Cook until the flour develops a pleasant aroma and turns a light golden colour.
Remove it from the heat and allow it to cool slightly. Once it has cooled enough to handle, strain the mixture to remove any lumps and keep it aside.
Step 2: Prepare the Sugar Syrup
Add sugar and water to another pan and cook over medium heat.
Continue cooking until you get a thick and sticky syrup. The consistency of the syrup is extremely important because it determines whether the Soan Papdi develops its characteristic texture.
Add the lemon juice and mix well.
Pour the hot syrup onto a greased plate or tray and allow it to cool until it becomes warm enough to handle.
Step 3: Create the Soan Papdi Strands
This is the most important part of the recipe.
Grease your hands lightly with ghee and carefully gather the warm sugar mixture.
Start stretching the mixture and then folding it back onto itself. Repeat the stretching and folding process several times.
As you work, sprinkle small amounts of the roasted flour mixture over it. This helps prevent the strands from sticking together.
Continue the process until the sugar mixture develops thin, delicate, thread-like strands.
Be patient during this stage—the texture of the final sweet depends largely on how well the mixture is stretched and folded.
Step 4: Shape the Soan Papdi
Take a small mould, tray or serving bowl and place some roasted chopped almonds at the bottom.
Transfer the prepared Soan Papdi strands into the mould and gently press them down.
Don't compress them too firmly, as doing so can make the sweet dense and remove some of its flaky texture.
Step 5: Let It Set
Allow the Soan Papdi to cool completely and set.
Once firm, gently remove it from the mould and transfer it to a serving plate.
Your homemade, flaky Soan Papdi is ready to serve.
Tips for Getting the Perfect Texture
- Roast the flour on low heat to prevent it from burning.
- Don't rush the sugar syrup; its consistency is crucial.
- Allow the syrup to cool enough before handling it.
- Grease your hands lightly to make stretching easier.
- Add the flour mixture gradually while creating the strands.
- Don't press the finished Soan Papdi too firmly into the mould.
