This coating prevents bacteria from entering the egg. When these layers are removed, bacteria such as Salmonella can get inside the egg. Therefore, it is mandatory to keep the eggs there in the refrigerator at a temperature of 4°C or less, so that the growth of bacteria can be stopped and the eggs remain safe for a long time.
