Mozzarella cheese is a kitchen favorite, used in everything from pizza, pasta, and lasagna to sandwiches, garlic bread, parathas, and even salads. But many people skip recipes just because they don’t have cheese at home. Market-bought mozzarella can be expensive and isn’t used daily, so storing it often feels impractical.
The good news? You can make fresh, healthy mozzarella cheese at home with just two ingredients—and it’s completely hassle-free. Chef Pankaj Bhadoria has shared a simple method that anyone can follow.
Mozzarella is quite similar to India’s traditional paneer, which has been consumed for centuries. The difference lies in its stretchy texture and creamy taste. When made fresh at home, mozzarella tastes even better than store-bought versions.
Only 2 Ingredients You Need
According to Chef Pankaj Bhadoria, you only need:

2 liters full-cream buffalo milk

White vinegar (to curdle the milk)
The process is similar to making paneer, but temperature control plays a crucial role in getting that signature stretchy mozzarella texture.
How to Make Mozzarella Cheese at Home

Pour the milk into a large pan and heat it gently.

Heat the milk to around 46°C. If you don’t have a thermometer, the milk should be hot but comfortable enough to dip your finger in for a few seconds.

Once the milk reaches the right temperature, add white vinegar and stir gently until the milk starts separating into curds and whey.

Cover the pan and let it rest for 10–15 minutes, then turn off the heat.

Strain the curds and squeeze out excess water. At this stage, the cheese will look grainy.

Transfer the curds to a pan, add a little salt, and cook on medium heat, stirring continuously.

Within 5–6 minutes, the cheese will turn smooth, soft, and stretchy.

Shape it into a ball using your hands and immediately dip it into ice-cold water. Let it rest for a few minutes.
Your fresh homemade mozzarella cheese is now ready to use.
How to Store Mozzarella Cheese
To keep mozzarella fresh and odor-free:

Store it in an airtight glass container, submerged in water, and refrigerate.

Alternatively, keep it in a zip-lock bag and freeze it for longer storage.
This method ensures your cheese stays soft, fresh, and ready to use whenever you need it.
