Holi Special: Maharashtra’s Traditional Sweet Roti Puran Poli Adds Extra Flavor to the Festival

The festival of Holi is a beautiful celebration of colors, joy, and togetherness, but it is also deeply connected with traditional sweets across India. As the month of Phalgun arrives, homes are filled with festive cheer and the aroma of delicious dishes. While gujiya and malpua dominate Holi celebrations in many states, Maharashtra has its own unique and much-loved delicacy that defines the festival—Puran Poli. More than just a sweet roti, puran poli is a cultural symbol that reflects the warmth and tradition of Maharashtrian households during Holi.
In Maharashtra, Holi is not limited to playing with colors; it is equally about strengthening relationships through food. On this occasion, homes resonate with the sweet fragrance of cooked chana dal, jaggery, and cardamom, which together form the filling of puran poli. Soft, golden, and generously brushed with ghee, this traditional flatbread tastes heavenly when served hot. Its simple ingredients and rich flavor make it a festive favorite that people wait for all year.
Preparing puran poli is a cherished tradition in both villages and cities of Maharashtra. Families often begin preparations days in advance by soaking lentils, arranging jaggery, and perfecting the filling. Even though readymade sweets are easily available today, the taste of homemade puran poli holds a special emotional value that cannot be replaced. The process of making it together adds to the festive spirit and brings family members closer.
To make puran poli, chana dal is soaked and pressure-cooked until soft, then mashed and cooked with grated jaggery until thick. Aromatic spices like cardamom and nutmeg are added to enhance the flavor, along with a touch of ghee for richness. Once the mixture cools, it is shaped into small balls. A soft dough is prepared using all-purpose flour or a mix of wheat and refined flour, turmeric, oil, and water. The dough is then stuffed with the sweet lentil mixture, rolled gently, and cooked on a pan until golden brown on both sides.
Served hot with ghee, milk, or traditional aamti, puran poli perfectly captures the essence of Holi in Maharashtra. This sweet roti is not just a dish but a celebration of tradition, love, and festive warmth, making Holi even more special for those who savor its timeless taste.
