Why does rice stick?
According to Chef Prateek, rice tends to stick together when cooked in a pressure cooker, due to the extra starch in the rice, which causes it to stick and become soggy. This can also happen if the rice is cooked without soaking or washed improperly.
What things should be kept in mind to make fluffy rice?
Wash thoroughly
To ensure perfect and fluffy rice, it's essential to thoroughly wash and clean it before cooking. Rinse the rice 2-3 times to remove any starch and ensure fluffy rice.

Desi Ghee
After rinsing the rice, soak it in clean water for 15-20 minutes. Soaking the rice allows the grains to absorb the water. This helps them swell and increase their length during cooking, while also creating a soft and fluffy texture. Add ghee to the rice while cooking.
How to prepare
To make fluffy rice in a pressure cooker, first add a spoonful of ghee to the pressure cooker, then add cumin seeds and let them crackle. Now add the soaked rice. After this, add just enough water to cover the rice. The level of rice and water should be approximately equal. 1 to 1.5 cups of water is sufficient for 1 cup of rice. After this, close the lid of the pressure cooker and let it cook on high flame. Let it whistle twice, then turn off the gas and let the pressure release automatically. After this, your rice will be fluffy, shiny, and restaurant-style.
