Seasonal Vegetables: If people want a good veg dish today, then they have very limited options. Because they have nothing else except paneer, mushroom and mixed veg. But today we will tell you about such a dish of Jharkhand in front of which even mutton fails. Local people know it as Rugda. Many people say that this is veg mutton for vegetarians. The special thing is that it is available only in the rainy season. That means those who want to enjoy it now will have to wait for two more months. Actually, this vegetable found in the forests of Jharkhand is a species of mushroom. However, in many places it is also called Puttu.
Rugda contains many nutrients
Rugda is not only tasty but also very beneficial for health. It contains many nutrients that help in increasing our immunity. It contains high quality protein, vitamin C, vitamin B complex, riboflavin, thiamine, vitamin B12, folic acid, and elements like calcium, phosphorus, potassium, copper and vitamin D.
Helpful in fighting diseases like cancer
Rugda is used in Ayurveda for the treatment of many diseases. It is considered effective in asthma, constipation and skin diseases. Apart from this, it has also proved helpful in preventing and fighting serious diseases like cancer.
12 species of Rugra are found
There are about 12 species of Rugda. Among them, white Rugda is considered the most nutritious. It is mainly found in Jharkhand. But it is also found in some quantity in Uttarakhand, West Bengal and Odisha. It contains more nutrients than normal mushrooms. Its price usually ranges between Rs 300 to Rs 1000 per kg. However, its price also keeps fluctuating depending on the demand.
Material
Rugda – ½ kg
Tomatoes – 1 (chopped)
Onion – 1 (chopped)
Ginger-garlic paste – 1 tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Turmeric – ½ tsp
Cumin seeds – ½ tsp
Oil – ¼ cup
Salt – according to taste
Rugda Curry Recipe
- First of all, clean and wash Rugda thoroughly and cut it into two pieces.
- Chop onion and tomato finely.
- Now heat oil in a pan and add chopped rugda and fry for some time.
- When the mushrooms turn light golden, take them out in a plate.
- Add some more oil in the same pan and fry the cumin seeds. Then add onion, tomato, ginger-garlic paste and all the dry spices and fry them.
- When the masala is cooked well, add already roasted rugda to it and cook for some time.
- Add salt as per taste and let it cook on low flame for 5-7 minutes.
- Hot Rugda Mushroom Curry is ready, which you can serve with roti or rice.
