How to Make Mango Seed Curry

Step 1: Extract the Seeds

Wash the mango seeds thoroughly and dry them in sunlight. Carefully crack them open and remove the white inner seed. Peel off the outer covering and cut the soft inner portion into small pieces.

Step 2: Boil the Seeds

Wash the pieces 2–3 times to remove any bitterness or residue. Place them in a pressure cooker, add salt, and boil for 3–4 whistles until they become soft. Drain and set aside.

Step 3: Prepare the Tempering

Heat oil in a pan. Add mustard seeds and curry leaves and let them crackle for a few seconds.

Step 4: Cook the Curry

Add the boiled mango seed pieces into the pan. Mix in turmeric, red chilli powder, dry ginger powder, and other spices of your choice. Stir well and cook for a few minutes until everything blends together.

Step 5: Garnish and Serve

Turn off the flame and garnish with fresh coriander leaves. Your mango seed curry is ready to serve hot with roti or rice.
