Teej Special Recipe: Make Kesar Jalebi on the special occasion of Teej, it tastes amazing!

If you want to try something special on the occasion of Teej, then you can try Kesari Jalebi. It is wonderful in taste and today we are going to tell you about its recipe. 

Ingredients:

For Batter:

1 cup all-purpose flour

2 tbsp rice flour

a pinch of baking soda

a pinch of saffron thread 

water as needed to make a thick batter

For the Sugar Syrup:

1 cup sugar

1/2 cup water

A pinch of saffron threads

Few drops of lemon juice

For deep frying:

Ghee or oil

Instruction:

To make batter

In a mixing bowl combine all-purpose flour, rice flour, baking soda, and soaked saffron threads.

Add water gradually to the dry ingredients and whisk well to make a smooth and thick batter. The batter should be thick enough to coat the back of a spoon.

Cover the batter and let it rise in a warm place for 6-8 hours or overnight. The batter will rise and become frothy.

To make sugar syrup:

Mix sugar and water in a saucepan. Bring it to a boil, then lower the heat and cook till the sugar dissolves completely.

Add saffron threads and a few drops of lemon juice to the sugar syrup. Cook on low heat for a few more minutes until the syrup thickens slightly. The sugar syrup should be of one string. Switch off the flame and keep the sugar syrup aside.

Fry Jalebi:

For frying, heat ghee or oil in a broad pan. 

Pour the batter into a squeeze bottle or a piping bag fitted with a small round nozzle.

Carefully squeeze the batter into the hot oil to make a spiral shape. Fry the jalebis till golden and crisp. 

Once fried, remove the jalebis using a slotted spoon and immediately dip them in hot sugar syrup. Let them soak for a minute or two.

Take out the jalebis from the sugar syrup and keep them on a plate. Garnish with chopped nuts if desired.

Allow the jalebis to cool slightly before serving.
