Ingredients required

1 cup rice

1/2 cup boiled, mashed corn

2 tbsp semolina

1/4 tsp turmeric

salt as required

2 tbsp virgin olive oil

1 large onion

1 tsp garlic paste

1/2 tsp red chili

1/2 1 tsp coriander powder

as required Paneer pieces

> First heat oil in a pan. Now add onion, garlic paste and cook till the onion turns golden.

> Now put boiled and mashed sweet corn in the pan. Also add red chili, turmeric, coriander powder, and salt to taste and mix well and cook for 2-4 minutes.

> Now take the remaining rice in a big bowl and mash it well. Transfer the vegetable mixture to a bowl along with 2 tablespoons of the roasted semolina. Mix well until a dough-like dough is formed.

> Now break the mixture into small balls and make tikkis out of it. Flatten it and seal it well by filling a small piece of cheese in the middle.

> Now heat 1 teaspoon oil on a flat pan or griddle and fry the rice tikkis till they turn golden brown from both sides.

> Tikki is ready to be served after it is cooked well from both sides. Serve with tomato ketchup and mint chutney.
