Potato - 5-6

Tomato - 2

Capsicum - 2

Cumin - 1/2 tsp

Red chili powder - 1/2 tsp

Coriander powder - 1 tsp

Turmeric- 1/2 tsp

Green coriander leaves - 3 tbsp 

Asafoetida- 1 Pinch

ginger - 1-inch piece

Oil - 3 tbsp

First of all, wash and clean the potatoes and capsicum thoroughly. Then wipe them with a cloth and cut them lengthwise. If you want, you can also cut potatoes after peeling them. After this cut capsicum into pieces. Now finely chop the green chilies and coriander leaves.

Now put oil in a pan and keep it to heat on medium flame. When the oil is hot, put Ujira inside it and let it crackle. When cumin starts crackling, add finely chopped ginger, green chilies, asafoetida, turmeric, and coriander powder and fry for a few seconds. Then put chopped potatoes inside it, mix it well with the spices, and let it cook. Cover the pan and let the vegetable cook for 5-7 minutes. After the potatoes become soft, add chopped capsicum and mix. If needed, sprinkle some water inside it and once again cover the pan and let the vegetable cook. Along with this, you have to keep stirring the vegetable with the help of a ladle.

After cooking for some time, add red chili powder and salt as per taste to the vegetable and mix it by adding finely chopped green coriander on top. After this, add finely chopped tomatoes inside it and cook for some more time so that the tomatoes can also become soft. After this turn off the gas. Stuffed potato-capsicum curry is ready. Serve it with roti, paratha, or rice.
