Soak the walnuts in warm water for about 15 minutes. Drain the water and remove the peels by mashing them lightly between the palms. Finely grind the shelled walnuts in a food processor or grinder.

Heat ghee in a heavy bottom pan on medium heat. Add the ground walnut powder and fry for a few minutes till it starts to smell like walnuts.

Add sugar to the pan and mix well into the nut mixture. Cook over medium heat, stirring constantly, until the sugar melts and the mixture thickens.

Add milk to the pan and keep stirring continuously. Cook for another 5-7 minutes until the halwa thickens and starts leaving the sides of the pan.

Add cardamom powder and saffron threads to the halwa and mix well. Cook for another minute to blend the flavors.

Remove the halwa from the flame and transfer it to a serving dish. Garnish with chopped nuts like almonds and pistachios.

Serve walnut pudding warm or at room temperature. It can be taken as a dessert or as a sweet dish at festivals and special occasions.
