Instruction:

Heat oil or ghee in a pan or kadhai on medium heat. Add mustard seeds and let them splutter. Then add cumin seeds and let them crackle.

Add chopped onions, green chilies, and curry leaves to the pan. Fry till the onion becomes transparent.

Add the mixed vegetables to the pan and saute for a few minutes till they are slightly cooked.

Meanwhile, boil water in a separate vessel.

Add semolina along with the roasted vegetables to the pan. Dry roast the semolina on a low to medium flame for a few minutes till it turns golden brown in color and fragrant. Stir continuously to avoid burning.

After roasting the semolina, slowly add boiling water to the pan while stirring continuously.

Add salt as per taste and mix well. Lower the flame and cover the pan with a lid. Cook for about 5-7 minutes or till the semolina absorbs water and becomes soft. Keep stirring in between to prevent lump formation.

Remove from heat and leave it covered for a few minutes.

Whisk the cooked semolina upma with a fork. Garnish with freshly chopped coriander leaves.

Serve semolina upma hot by sprinkling lemon juice on top.
