Curd Eggplant Recipe

Material:

Half kg small brinjals

5 spoons of fresh curd

2 spoons of white sesame seeds

2 medium onions

2 medium tomatoes

1 spoon ginger garlic paste

2 green chillies

some green coriander

1 tsp turmeric powder

1 tsp coriander powder

1 tsp Kashmiri chilli

5 tsp oil

1/2 teaspoon mustard seeds

1 teaspoon Kasuri fenugreek

1 pinch asafoetida

Salt as per taste

Method to make Dahi Brinjal:

Wash the brinjal, cut it from two sides, and mix it with half a teaspoon of salt and turmeric powder.

Add 2 tablespoons of oil to a pan and cook the brinjal on low flame till it becomes soft.

Take out the cooked brinjal and add asafoetida, and mustard seeds in the same oil.

Add sesame seeds, garlic-ginger paste, and chili, and then add chopped onion and fry until golden.

Mix salt, turmeric, chili, and coriander powder in curd.

Add curd mixture to roasted onions and mix well.

Cook on low flame until the spices leave the oil.

Add tomatoes to it and fry the spices again.

Add Kasoori Methi and add water as per requirement.

When the water boils, add the cooked brinjals.

When the brinjal smells, turn off the gas and check whether it is cooked properly or not.

Add finely chopped coriander to the prepared vegetable.

Your spicy Dahi Baingan is delicious, and you can serve it with roti or paratha.
