PC: Yummy Tummy Aarthi
Coconut barfi is delicious and is also easy to make. So today we have brought a recipe for making it at home. So let us know how you can make it.
Ingredients:
2 cups desiccated coconut
1 cup condensed milk
1/2 cup milk
1/2 cup sugar
1/4 cup ghee (clarified butter)
1/2 tsp cardamom powder
A pinch of saffron threads (optional)
Chopped dry fruits (like almonds) for garnish or cashew nuts).
Instruction:
Grease a square or rectangular tray or plate with some ghee and keep it aside.
In a heavy bottom pan, add desiccated coconut, condensed milk, milk, and sugar. Mix well.
Start cooking this mixture on low to medium flame. Keep stirring continuously to prevent it from sticking to the bottom of the pan.
After cooking for a few minutes, add ghee to the mixture. Ghee will help give a rich flavor to the burfi and prevent it from sticking.
Keep stirring the mixture till it thickens and starts leaving the sides of the pan.
When the mixture becomes thick, add cardamom powder and saffron threads to it. Mix well to incorporate these flavors.
Pour the hot mixture immediately into a greased tray. Flatten it with a spatula or the back of a spoon.
While it is still hot, sprinkle the chopped nuts over the barfi and press them gently so that they stick.
Let the coconut barfi cool to room temperature. You can also keep it in the fridge for a few hours to make it easier to cut.
Once it cools and sets, cut them into diamond or square shapes.
