The taste of Rasmalai is amazing and today we have brought its recipe for you. Let's know how you can make it.

Ingredients:

For Rasgulla:

1 liter of full fat milk

1/4 cup lemon juice or vinegar

1 cup sugar

4 cups water

For Rabdi:

1 liter of full fat milk

1/2 cup sugar

1/4 tsp cardamom powder

Saffron threads (optional)

Chopped nuts (almonds, pistachios) for garnishing.

Recipe:

To make Rasgulla:

Boil milk in a heavy-bottomed pan. Once it starts boiling, slowly add lemon juice or vinegar to thicken the milk.

Once the milk is completely curdled, strain it through a muslin cloth or a fine sieve to separate the whey from the paneer.

Wash the paneer in cold water to remove the lemon/vinegar taste and squeeze out excess water.

Knead the paneer till it becomes smooth and no grains remain in it.

Divide the paneer into small pieces and make smooth balls out of them, taking care that there are no cracks in them.

Boil 4 cups of water in another vessel and add sugar.

Add the paneer balls to the boiling sugar water and cook on medium heat for about 15-20 minutes. They will double in size.

Take out the cooked rasgullas from the sugar water and let them cool.

To make Rabdi:

Boil 1 liter of milk in a heavy-bottomed pan and let it simmer on a low flame while stirring occasionally.

Add sugar and continue cooking till the quantity of milk is reduced to almost half.

 Add cardamom powder and saffron threads to the milk and mix well.

Let the rabri cool down to room temperature.

Assembling Rasmalai:

Squeeze the cooked rasgullas gently to remove excess sugar water.

Put the rasgullas in cold rabdi, and let them soak for a few hours.

Garnish with chopped nuts (almonds, pistachios) and saffron threads.
