2 cups grated pumpkin

1 cup milk

1/2 cup sugar

3-4 tbsp ghee

1/4 tsp cardamom powder

A pinch of saffron threads

Chopped nuts (e.g. almonds, cashews, and pistachios) for garnishing.


Heat a pan and add a tablespoon of ghee to it. Fry the chopped dry fruits till they turn golden brown. Take them out and keep them aside.

In the same pan, add another tablespoon of ghee and fry the grated pumpkin for a few minutes. Cook till the pumpkin becomes soft and reduces in quantity.

Pour milk into the pan and let the pumpkin cook in the milk. Stir occasionally to prevent sticking.

When the pumpkin is cooked and the milk is reduced, add sugar. Mix well and let the sugar dissolve. The pumpkin will release its moisture and the mixture will thicken.

Add saffron milk and cardamom powder. Mix it well. Saffron will give beautiful color and flavor to the halwa.

Continue cooking the mixture on a low flame, while stirring frequently. As the mixture thickens and starts leaving the sides of the pan, add ghee a tablespoon at a time and keep stirring.

Once the halwa becomes thick and the ghee starts separating, switch off the flame. The texture of the halwa should be shiny.

Garnish the pumpkin pudding with roasted nuts.

Serve the pumpkin pudding hot.
