Pista Kulfi is a popular Indian frozen dessert made with milk, sugar, and pistachios. This is a rich and creamy dish that can be enjoyed by people of all ages, especially in the summer. Today we have brought its recipe for you.
Contents :
2 cups full-fat milk
1/2 cup condensed milk
1/4 cup powdered sugar
1/4 cup unsalted pistachios, coarsely ground
1/4 teaspoon cardamom powder
Pinch saffron threads
Chopped pistachios for garnish
Instruction:
In a heavy bottom pan, bring the milk to a boil over medium heat. Keep stirring occasionally to prevent the milk from sticking to the bottom of the pan.
When the milk comes to a boil, lower the flame and let it boil. Keep stirring in between.
As the milk continues to boil, its quantity will gradually reduce and it will thicken. This process may take about 30-40 minutes.
Add condensed milk to the boiling milk and mix well. Condensed milk will add sweetness and richness to the kulfi.
Add powdered sugar and mix until it dissolves completely in the milk.
Add coarsely ground pistachios to the milk mixture. Keep aside some pistachios for decoration.
If using saffron, you can soak a few saffron threads in a spoonful of warm milk and then add it to the mixture for flavor and color.
Continue to boil the mixture until it reaches a slightly thick custard-like consistency. Make sure to stir regularly to prevent it from sticking to the bottom.
When the mixture becomes thick, turn off the flame and let it cool slightly.
Add cardamom powder to the cooled mixture and mix well. Cardamom adds a wonderful aroma to kulfi.
Pour the mixture into kulfi molds or small individual serving cups. You can also use small disposable cups or popsicle molds.
Garnish each kulfi with chopped pistachios.
Cover the molds with aluminum foil or plastic wrap and insert a wooden stick into each kulfi, if you are using molds without sticks.
Place the kulfi molds in the freezer and let them set for at least 6 hours or overnight.
Once the pistachio kulfi is completely set, take it out of the molds by immersing it in hot water for a while. This will help in loosening the kulfi.
Serve delicious Pista Kulfi. Enjoy the creamy and nutritious taste!
