Recipe of the Day: After tasting pickled brinjal, you will lick your fingers, and prepare it in this way

Required Ingredients:

- 500 grams small round brinjal for stuffing

- 4 tbsp onion paste

- 1 tsp red chilli powder

- 1 tsp dry mango powder

- 4 tsp ginger and garlic paste

- 1 tsp turmeric powder

- 4 tsp coriander Powder

– 4 teaspoons Fennel powder

– Salt as per taste

Ingredients for tempering:

- 4 tsp mustard oil

- Pinch of asafoetida powder

- 1 tsp mustard seeds

- 4 tsp readymade pickle powder

- 1 cup fresh tomato puree

- 1 tsp fennel

- 1 tsp nigella seeds

- Salt as per taste

You can prepare it in this way:

Heat oil in a pan, add onion, ginger, garlic and dry spices and fry.

Now make cross incisions in the brinjals and fill them with spice paste.

Heat oil again in the pan and add dry spices to it.

Now add tomato puree and add brinjal to it.

Now add pickle powder to it and keep turning the brinjals in between.

If the brinjal melts and the masala dries, then the brinjal is ready to serve.
