Makhana Kheer, also known as Fox Nut Pudding, Makhana is a delicious milk and sugar pudding. It is a popular dish often made during festivals and special occasions. Here's how you can make Makhana Kheer:

Ingredients:

1 cup makhana

4 cups milk

1/2 cup sugar (to taste)

1/4 tsp cardamom powder

a pinch of saffron thread (optional)

chopped nuts (almonds, cashews, pistachios) for garnishing.

Instruction:

Heat one tablespoon of ghee in a pan on medium heat. Add Makhane and fry them till they become crisp and lightly golden. Keep stirring for uniform roasting. If not, take them out of the pan and keep them aside.

Pour milk into the same pan and bring it to a boil. Lower the flame and let the milk simmer for about 15-20 minutes, stirring occasionally so that the milk does not stick to the bottom.

Crush the roasted makhana into thick pieces. You can do this using your hands or a rolling pin.

Add crushed makhana to the boiling milk and stir well. Let it cook for another 10-15 minutes so that the makhana absorbs some of the milk.

Add sugar and cardamom powder to the mixture, and stir well to dissolve the sugar.

If using saffron, you can soak a few saffron threads in a spoonful of hot milk and then add it to the kheer for flavor and color.

Continue cooking the kheer on low heat till it reaches a thick and creamy consistency. This may take another 10-15 minutes.

Once the kheer reaches the desired consistency, switch off the flame. Let it cool down a bit.

Garnish the makhana kheer with chopped nuts like almonds, cashews, and pistachios.

You can serve Makhana Kheer hot or cold depending on your preference. It is a delicious dessert that is enjoyed by people of all ages.
