Paneer Kathi roll is a popular Indian street food consisting of spicy paneer wrapped in flatbread (roti) and served with various savory fillings and chutneys. Here's a simple recipe for making Paneer Kathi Rolls:

Ingredients:

For Paneer Filling:

200 grams of paneer, cut into thin strips

1 teaspoon ginger-garlic paste

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 teaspoon garam masala

Salt to taste

1 tablespoon oil

Chopped onion, capsicum (capsicum), and Tomato

For the rotis:

1 cup whole wheat flour

Water for kneading

Salt to taste

Oil or ghee for cooking

For Green Chutney:

Handful of fresh coriander

1 small green chili 

1 small clove of garlic

Salt to taste

Squeeze lemon juice

Instruction:

To make paneer filling :

Heat oil in a pan. Add ginger-garlic paste and fry till fragrant. 

Add paneer strips, red chili powder, turmeric powder, garam masala, and salt. Cook it till the paneer is well coated and turns light brown.

Add chopped onions, capsicum, and tomatoes. Fry till they are lightly cooked but still retain their crispiness. Keep aside. 

To make rotis:

Mix whole wheat flour, salt, and a little oil or ghee in a bowl.

Add water gradually and knead into a smooth dough. Divide the dough into small balls. 

Roll each ball into a thin roti with the help of a rolling pin.

Make Green Chutney:

Make a smooth paste using a blender by adding coriander leaves, green chilies, garlic, salt, and lemon juice. Add some water if required.

Assemble the Kathi Rolls:

- Heat a pan or griddle. 

Cook the rotis till they puff up and turn golden brown on both sides. Apply some oil or ghee while cooking.

Place the cooked roti on a plate. Spread a spoonful of green chutney over it. 

Put a portion of the prepared paneer filling on one end of the roti.

Roll the roti tightly around the stuffing, folding the edges as you go.

Wrap the bottom of the roll with parchment paper or foil to hold it together.

Serve the Paneer Kathi Rolls with additional green chutney and salad.
