Recipe: Make your day special with mint rice, note down the easy recipe!

For people who love to taste different dishes throughout the day, variety in breakfast, lunch, snacks and dinner is essential. Today, we are presenting Pudina Rice, an ideal dish for dinner which will surely be liked by every member of the house. It is easy to make and not only adults but children also eat it with great enthusiasm. Although simple or cumin rice is often made at home, if you are thinking of trying something new then mint rice is a better option. It is easy to digest and is also beneficial for health.

Material:

Rice – 1 cup

Small Onions – 2

Tomatoes – 1

Potato – 1 

Carrot– 1 chopped 

Capsicum – 1/2 cup chopped

Beans – 5

Peas – 2 tbsp

Cashews – 8-10

Cumin – 1 tsp

Bay leaf – 1

Mint Chive leaves – 1 cup 

Chopped coriander – 1 cup

Garlic – 3-4 cloves

Ginger – 1-inch piece

Green chilli – 2

grated coconut – 2 tbsp

Star anise – 1

Cardamom – 2

cloves – 4-5

Cinnamon – half inch Slice of

black pepper – 1/2 tsp

Ghee – 2 tbsp

Salt – as per taste

Method:

-First of all, add mint and coriander leaves in a mixer jar.

- Add ginger, finely chopped onion, garlic and grated coconut.

Now add star anise, cardamom, cinnamon, black pepper and cloves to this mixture and make a smooth paste by adding water.

-Take out this paste in a bowl and keep it aside. Now heat 2 tablespoons of ghee in a pressure cooker on medium flame.

-When the ghee gets hot and melts, add cumin seeds and bay leaves and fry until a nice aroma comes out.

Then add cashew nuts and fry until golden brown. Now add finely chopped onion and fry until the onion becomes soft.

After this, add finely chopped tomatoes, capsicum, potatoes, carrots, peas and beans and fry for some time until all the vegetables become soft.

When all the vegetables become soft, add the prepared paste to it and mix well.

Then add 2 cups of water and salt as per taste.

Now soak the rice in water for about half an hour, then add it to the spice mixture and mix well.

- Close the lid of the pressure cooker and cook till 2-3 whistles.

- Turn off the gas and when the pressure is gone, open the lid. Mint rice is ready. Serve it with chutney or raita.
