Stuffed Bitter Gourd Recipe:

-To make stuffed bitter gourd, first take 8-10 medium-sized bitter gourds.

Now peel the bitter gourd lightly from the outside and remove the seeds from the inside.

- Sprinkle salt inside the bitter gourds and leave them like this for about 15-20 minutes.

-To prepare bitter gourd masala, you will need about 2-3 tablespoons of fennel and 2 tablespoons of whole coriander and nigella seeds.

-Fry coriander and nigella lightly on the pan and grind them finely with fennel.

Now finely chop about 2-3 large onions. Add 5-6 garlic cloves and a 1-inch piece of ginger in it. Grind them together.

- Now add ground spices to it. Add 2 tablespoons of dry mango powder to it.

-Add some red chilli, salt and turmeric and mix all the spices together.

-Wash the bitter gourd with clean water, remove the salt and pat it dry.

Now fill the spices in the bitter gourd. Keep all the stuffed bitter gourds aside.

Now tie them with a thread so that they do not open while turning and the masala does not come out.

Now take a flat pan or wide pan and heat mustard oil in it.

-You have to take a little more oil so that all the bitter gourds are coated with oil from one side.

-Add asafoetida and cumin seeds in oil and add all the bitter gourds filled with spices and cover them.

-Keep the gas flame medium and when the bitter gourds become light brown from below, turn them.

Similarly, cook the bitter gourd from both sides and then reduce the flame of the gas.

- Keep cooking the bitter gourds until they become slightly crisp.

-Delicious stuffed bitter gourd is ready. You can easily eat them by keeping them in the fridge for 15 days.
