Ingredients:

  • Spring roll wrappers (available at Asian grocery stores or supermarkets)
  • 1 cup finely shredded cabbage
  • 1 cup julienned carrots
  • 1 cup bean sprouts
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 1/2 cup chopped spring onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooking oil for frying
  • Sweet chili sauce or dipping sauce of your choice for serving

Instructions:

  1. In a large pan or wok, heat some oil over medium heat. Add the garlic and sauté for a minute until fragrant.

  2. Add the cabbage, carrots, bell peppers, mushrooms, and bean sprouts to the pan. Stir-fry for a few minutes until the vegetables are slightly tender but still crisp.

  3. Add the soy sauce, oyster sauce (if using), sesame oil, and season with salt and pepper to taste. Mix well to coat the vegetables evenly. Cook for an additional 2-3 minutes. Remove from heat and let the filling cool.

  4. Take a spring roll wrapper and place it on a clean surface in a diamond shape with one point facing towards you. Spoon a portion of the vegetable filling onto the lower half of the wrapper.

  5. Fold the bottom point over the filling, tuck in the sides, and roll it tightly towards the top point. Moisten the top point with a little water to seal the spring roll. Repeat with the remaining wrappers and filling.

  6. In a deep pan or wok, heat oil for frying. Once the oil is hot, carefully add the spring rolls in batches and fry until they turn golden brown and crispy. Remove them with a slotted spoon and drain on a paper towel to remove excess oil.

  7. Serve the spring rolls hot with sweet chili sauce or your favorite dipping sauce.
