A sweet called Sheer Khurma is made on Eid. The taste of sheer made from milk and vermicelli is so special that the eaters keep licking their fingers. Sheer Khurma is made especially on the occasion of Eid. In the Persian language, Sheer means milk and Khurma means dates. On Eid, Sheer is made from milk, vermicelli and dates. It is served to the guests coming to the house. If you also want to taste traditional vermicelli on Eid, then make special sheer khurma like this. Let's learn the recipe of Sheer Khurma.

Eid Special Sheer Khurma Recipe:

To make Sheer Khurma, you need about 150 grams of fine vermicelli.

Break the vermicelli into 1-2 inch pieces, so that they cook properly.

Use dry fruits like almonds, pistachios, chironji, raisins and cashew nuts.

You can take dry fruits as per your choice and quantity. Pistachios should be unsalted.

Take fresh dates or figs to add to the sheer. Soak the figs overnight and use them.

For vermicelli, take 3 litres of full cream milk and take a heavy bottom pan to cook the milk.

First of all, pour half a cup of water into the pan and when the water boils, add milk to it. This prevents the milk from sticking to the bottom.

Now boil the milk on a high flame. If you want, you can also add saffron soaked in hot milk to the milk.

Soak all the dry fruits in water and then peel them and chop them finely.

Now put 2 tablespoons of ghee in a pan and lightly fry almonds, pistachios, raisins and charoli in it.

Add 2 tablespoons ghee again to the pan. - Add vermicelli to it and fry on low flame for 2-3 minutes.

After frying, the colour of vermicelli changes and it becomes slightly crispy.

When the milk comes to a boil and continues boiling for about 10-15 minutes, add 100 grams of condensed milk or milk powder dissolved in water.

Now add vermicelli in milk and cook on low flame for 5 minutes.

Then add sugar, saffron milk and cardamom powder to the vermicelli and cook while stirring.

Cook it for about 10-15 minutes until it thickens a bit, then turn off the flame.

Take out the sheer khurma in a bowl and sprinkle some dry fruits on top and serve.
