Poha is a popular breakfast dish in India. Poha is a light and tasty dish made with vegetables and spices. See the recipe for making poha here:
1 cup poha
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 small onion, finely chopped
1 green chili, finely chopped
few curries leaves
1/4 cup peanuts
1/4 cup mixed vegetables (carrot, peas, beans, etc.), finely chopped
Salt to taste
1/2 teaspoon turmeric powder
Fresh coriander, chopped (for garnish)
Lemon wedges (for serving)

Wash the poha under cold running water for a few seconds. Drain the water and keep it aside. Let the poha soak up the remaining moisture while you prepare the other ingredients.
Heat oil in a pan or wok on medium heat. Add mustard seeds and cumin seeds. Let them explode
Add chopped onions, green chilies, and curry leaves to the pan. Fry till the onion becomes transparent.
Add peanuts to the pan and fry till they turn golden brown.
Add the vegetables to the pan and fry for a few minutes till they are slightly cooked.
Now put the soaked poha in the pan. Mix well to combine all the ingredients.
Sprinkle salt and turmeric powder over the mixture. Mix it gently to ensure that the poha is evenly coated with the spices. Cook for a few more minutes while stirring occasionally.
Remove from heat and garnish with freshly chopped coriander leaves.
Pour lemon juice on top and serve Poha Upma hot.
