Ingredients
Vegetable stock/bone broth - 6 cups
Green moong dal - 500 grams
Ground cumin - 1 tablespoon
Ground turmeric - 1 tablespoon
Ground coriander - 2 teaspoons
Cardamom pods - 6 pods
Fresh chilies to taste
Ghee - 1 big spoon
Onion - 4 large
Garlic cloves - 6
Ginger - 2 small pieces
Carrot - 4 large
Salt - 2 pinch
Black pepper - 2 pinch
Greens - baby spinach, spinach, and kale
Lemon juice - 1 lemon
Method
- Boil the broth in a saucepan, and add the mung beans, then cook for 20 minutes or simmer on medium heat.
Meanwhile, roast the spices until they start to smell.
Add ghee to the pan, add onion and spices, and fry for 10 minutes.
Add ginger and garlic and fry on low flame for five minutes.
Add carrots, celery, fried onions, ginger, and garlic to moong dal.
Add salt, and black pepper and cover, and cook on medium heat for 15 minutes.
Add more stock if necessary to prevent burning.
Add green vegetables and finish with lemon juice.
