Garam masala - 1 teaspoon

Recipe
Soak Lobia in water overnight in a bowl. Alternatively, you can boil it in a pressure cooker, but it may take longer to cook. Boil the potatoes, peel them, then mash them. Similarly, when cowpea is cooked, drain its water, mash it well and put it in a bowl. Wash onion, green chillies, coriander and ginger, chop them finely and keep them in a separate bowl. Place a pan on the stove and add a tablespoon of oil to it.
When hot, add cumin seeds for seasoning. Then add onion, ginger and green chilli and fry until it turns golden brown. Once done, add mashed lobia and mix well. Now add mashed potatoes to it and keep stirring.
After a minute, add all the spices like red chilli powder, garam masala, coriander powder and chaat masala. Mix well and cook for a few minutes to ensure that the spices are mixed evenly. Switch off the flame and add chopped coriander leaves to the mixture. Let the cowpea mixture cool. When it cools down, shape the mixture into small kebabs and keep them on a plate. To prevent them from breaking while frying, keep them in the freezer for 15 minutes. Heat oil in a pan and fry 5-6 kebabs at a time on low flame. When they become golden brown on both sides, take them out on a plate. Enjoy these nutrient-rich kebabs with tomato sauce or green chutney.
