Many people like the taste of Shrikhand but do not know its recipe. Today we have brought this recipe for you.

Ingredients:

For Shrikhand:

  • 2 cups thick curd (hung curd or Greek yogurt)
  • 1/2 cup powdered sugar
  • 1/4 tsp cardamom powder
  • A pinch of saffron threads (soaked in 1 teaspoon hot milk)
  • 1-2 tbsp rose water
  • Some chopped almonds and pistachios for decoration

For rose syrup:

  • 1 cup sugar
  • 1 cup water
  • 1-2 tbsp rose water
  • Some saffron threads (optional)
  • 1/4 tsp cardamom powder

Instruction:

To make Shrikhand:

  • Hang the curd in a muslin cloth or fine mesh strainer for about 4-6 hours or until it becomes thick and the whey dries up. You can do this by placing the curd in a muslin cloth and hanging it over a bowl in the refrigerator.
  • When the curd becomes thick, take it out in a mixing bowl.
  • Add powdered sugar, cardamom powder, and soaked saffron (saffron threads soaked in hot milk) to thick curd.
  • Mix everything together until the sugar mixes well with the curd.
  • Add rose water and keep mixing until you get a smooth and creamy consistency. Adjust the quantity of rose water according to your taste.
  • While making rose syrup, keep Shrikhand in the refrigerator.

Make rose sherbet:

  • Mix sugar and water in a saucepan. Heat over medium heat, stirring until sugar dissolves.
  • Once the sugar dissolves, add cardamom powder and saffron threads.
  • Let the syrup boil for about 5-7 minutes until it thickens slightly.
  • Remove the syrup from the flame and let it cool to room temperature.
  • When the syrup cools down, add rose water to it and mix well. Adjust the rose water as per your taste.

Assembling Gulab Shrikhand:

  • Take serving bowls or glasses of your choice.
  • Pour a layer of prepared rose syrup into each bowl or glass.
  • Pour a tablespoon of chilled shrikhand over the rose syrup layer.
  • Garnish with chopped almonds and pistachios.
  • Alternatively, you can also decorate with rose petals for beauty.
  • Before serving, keep the Gulab Shrikhand in the refrigerator for about an hour so that the flavors blend together.
  • Serve chilled and enjoy your homemade Gulab Shrikhand!
