Instruction:

Wash the poha in running water for a few seconds. Drain off the excess water and keep it aside for a few minutes to soften.

In a mixing bowl, add poha, mashed potatoes, chopped onions, green chilies, grated ginger, coriander leaves, lemon juice, turmeric powder, red chili powder, garam masala powder, and salt. Mix well to combine all the ingredients.

Take a small portion of the mixture and shape it into a cutlet or patty. Repeat the process to make cutlets from the remaining mixture.

Place the bread crumbs on a plate. Coat each cutlet with bread crumbs from all sides, pressing gently so that the crumbs stick well.

Heat oil in a nonstick pan or wok on medium heat.

As soon as the oil becomes hot, put the cut cutlets in the pan and cook till they become golden brown and crispy from both sides. Flip the cutlets gently so that they do not break.

When the cutlets are cooked and crispy, take them out of the pan and drain the excess oil on tissue paper.

Serve poha cutlets hot with ketchup, chutney, or any side of your choice.
