You might have eaten potato curry many times but now you should try curd potatoes. These are very tasty and everyone in your house will like Ingredients:

To boil potatoes:

  • 250 grams potatoes
  • water to boil
  • salt to taste

For curry:

  • 400 grams curd
  • 2 tbsp ghee or oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon asafoetida
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 inch piece ginger, finely chopped or grated
  • salt to taste
  • chopped fresh coriander for garnish

Instruction:

Boil potatoes:

Place the potatoes in a pressure cooker, cover with water, and add a pinch of salt.

Boil the potatoes until they are cooked and can be easily pierced with a fork.

Let the boiled potatoes cool, peel them, and cut them into pieces. Keep aside.

Prepare curry:

  • Beat the curd in a large bowl until smooth and add a glass of water to it. Mix well.
  • Heat ghee or oil in a large pan or kadhai.
  • Add cumin, asafoetida, turmeric powder, red chili powder, and grated ginger. Keep frying for a while until the spices start releasing their aroma.
  • Add chopped boiled potatoes and stir well to coat in the masala.
  • Cook the potatoes in the spice mixture for about 2 minutes.
  • Lower the flame and add the beaten curd-water mixture. Keep stirring continuously.
  • Bring the curry to a boil and simmer over low heat for about 10 minutes, allowing the flavors to blend together.
  • Add salt as per your taste and mix well.
  • Garnish curd potatoes with freshly chopped green coriander.
