Recipe: Make carrot kheer on this Holi, taste such that you will enjoy it!

Gajar ki kheer is made with carrots, milk, cashew nuts, and dates, and flavored with cardamom and saffron. Let's know how you can make it at home.

Ingredients

3 carrots small, cut into pieces, about 2 cups

1-liter milk

⅓ cup cashews roasted

8 dates seeds

1 pinch saffron

½ teaspoon green cardamom

Almonds or pistachios to garnish

Peel off the carrot and cut it into pieces.

- Add carrots, cashews, and dates along with 1 cup of milk in the Instant Pot insert. Start it in manual or pressure cook mode with the vent in the ceiling position for 7 minutes.

- When the Instant Pot beeps, turn off the Instant Pot. Quickly release the pressure and open it. Transfer the ingredients to a blender and blend to make a smooth paste.

If needed, add some part of the remaining milk while blending.

Pour the remaining milk and blended mixture into the Instant Pot insert. Add cardamom, and saffron threads and mix well.

Start the Instant Pot in sauté mode and allow the pudding to come to a boil. Turn off the Instant Pot as soon as it comes to a boil.

Pour the pudding into a serving bowl and let it cool on the countertop and in the refrigerator. Serve chilled and garnished with pistachios.
