Kathi roll, also known as Frankie or wrap, is a popular street food from Kolkata, India. It is usually wrapped in a paratha with a delicious filling. Here's a simple recipe for making delicious kathi rolls:

Ingredients :

For Filling:

2 cups paneer/tofu, cut into small pieces

1 tbsp oil

1 onion, thinly sliced

​​1 capsicum, thinly sliced

​​1 tsp ginger-garlic paste

1 tsp cumin powder

1 tsp coriander powder

1/2 tsp Turmeric Powder

1/2 tsp Red chili powder (adjust as per spice preference)

Salt to taste

Fresh coriander, chopped

For Parathas:

2 cups whole wheat flour

, water,

salt as required

, oil as per taste, for cooking parathas

For assembly:

Mint chutney or any chutney of your choice

Chopped onion and tomato

Lemon slices

Instructions :

Prepare paratha dough by mixing wheat flour, salt, and water. Knead until you get a smooth and pliable dough. Leave it on for 15-20 minutes.

Heat oil in a pan and add chopped onions to it. Fry till it becomes transparent.

Add ginger-garlic paste and cook for a minute till the raw smell disappears.

Add paneer/tofu) pieces and cook till they become cooked and soft. If using chicken, make sure it is fully cooked.

Add chopped capsicum, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few more minutes till the capsicum becomes slightly soft.

Add chopped coriander leaves and mix. Remove from heat and keep the filling aside.

Divide the paratha dough into small portions and roll them into thin rotis.

Heat a griddle or griddle and cook the parathas from both sides, applying oil as required, till they turn golden brown and cooked.

Once the parathas are ready, place the filling in the center of each paratha.

Drizzle some mint chutney or chutney of your choice over the stuffing.

Add some chopped onions and tomatoes on top.

Roll the paratha tightly, tucking the sides to make a roll.

Serve the Kathi Rolls immediately with lemon slices.
