Recipe: How to prepare potato kheer

Potato kheer, also known as Aloo ki kheer, is a unique and delicious dessert popular in some regions of India. Here's a simple recipe to prepare potato kheer:
Ingredients:
- 2 medium-sized potatoes, boiled and mashed
- 1 liter milk
- 1/2 cup sugar (adjust according to taste)
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (such as almonds, cashews, or pistachios)
- A few strands of saffron (optional)
- 1 tablespoon ghee (clarified butter)
- Pinch of salt

Heat ghee in a deep saucepan or kadai on medium heat.

Add the mashed potatoes to the pan and sauté them for a few minutes until they turn slightly golden brown.

Pour in the milk and stir well. Allow the mixture to come to a gentle boil.

Reduce the heat to low and let the kheer simmer for about 30-40 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.

Add sugar and cardamom powder to the kheer. Stir well until the sugar dissolves.

Continue cooking the kheer on low heat for another 10-15 minutes or until it thickens to a desired consistency, stirring occasionally.
