Ingredients:

1/2 cup sago

4 cups milk

1/2 cup sugar

1/2 tsp cardamom powder

2 tbsp chopped nuts (almonds, cashews, pistachios)

A pinch of saffron threads (optional)

1 tbsp ghee eat

Some raisins (optional)

A small piece of qualified camphor (optional, to taste)

1/2 teaspoon rose water (optional)

Instruction:

Wash the sago in cold water until the water runs clear.

Soak the washed sago in enough water for about 4-5 hours or overnight. They should swell and become soft.

Heat ghee in a heavy bottom pan.

Add chopped nuts and fry until golden brown. Take them out and keep them aside for garnishing.

Add soaked and drained sago in the same pan.

When the milk comes to a boil, lower the flame and let the sabudana boil. Continue cooking, stirring continuously, till the sago turns translucent. This may take about 20-25 minutes.

Add sugar to boiling kheer and mix well.

Add cardamom powder and saffron threads (if using) to taste.

You can also add a small piece of edible camphor for a unique taste and aroma.

Let the kheer cook for another 5-7 minutes or until it thickens to your desired consistency.

Once the kheer reaches the desired consistency and the sago is completely cooked, take it off the flame.

Add roasted nuts and raisins.

If you wish, add a few drops of rose water for an aromatic touch.

Let the Sabudana Kheer cool down to room temperature.

If you wish, you can serve it hot or cold, garnished with additional dry fruits and saffron threads.
