Kitchen Tips: Except ice cream Kulfi, make super tasty and healthy Shrikhand this summer, children and adults will keep licking their fingers

To make Shrikhand you need
5 cups curd
8 to 9 tbsp sugar or as required
½ tsp cardamom powder
24 to 30 saffron threads
½ tbsp hot milk
7 to 8 pistachios chopped

Method
To make Shrikhand from curd, first of all put the strainer in a deep bowl. Then spread a muslin net cloth on the sieve. Pour fresh curd on it. (Remembering that curd should not be too sour)

Bring the four edges of the muslin cloth together by adding curd and tie it tightly. Place a heavy bowl or lid on top of the curd. With this, all the water of the curd will come out easily. Leave it like this for about 4-5 hours.

Your hung curd will be ready to make Shrikhand. Take it out in a bowl. Then add sugar powder to it. Mix lightly with a spatula or spoon.

On the other hand take hot milk in a small bowl. Add 2 pinches of saffron threads and keep it aside.

Now add green cardamom powder and saffron milk to the curd mixture and mix with a whisk or hand blender until a soft batter is formed. With this you will get a smooth and thick shrikhand.

Cool the prepared Shrikhand in the fridge. While serving Shrikhand, add some chopped dry fruits like pistachios, cashews or almonds on top and serve cold.
