Ingredients:

  • 1 cup rice
  • 1/2 cup yellow moong dal (split yellow lentils)
  • 1 tablespoon ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon asafoetida (hing)
  • Salt to taste

  • Lemon wedges for serving

Instructions:

  1. Rinse the rice and moong dal under running water until the water runs clear. Drain and set aside.

  2. In a pressure cooker, heat the ghee over medium heat. Add the cumin seeds and mustard seeds. Let them splutter.

  3. Add the asafoetida (hing) and sauté for a few seconds.

  4. Add the rinsed rice and moong dal to the pressure cooker. Stir well to coat the grains with ghee and spices.

  5. Add turmeric powder, red chili powder, garam masala, and salt to taste. Mix well.

  6. Add 3 cups of water to the pressure cooker. Stir everything together.

  7. Close the pressure cooker lid and cook on medium heat for 3 whistles or until the rice and dal are cooked and soft.

  8. Allow the pressure to release naturally. Open the lid and give the khichdi a gentle stir.

  9. Garnish with fresh coriander leaves.

  10. Serve hot Rajasthani Khichdi with a squeeze of lemon juice on top. It pairs well with pickle, yogurt, or papad.
