Instant Mix Veg Khichdi is a nutritious and light dinner option that is easy to prepare. Here's a simple recipe:

Ingredients:

  • 1 cup rice
  • 1/2 cup yellow split moong dal (split yellow lentils)
  • 1 small onion, finely chopped
  • 1 small carrot, diced
  • 1 small potato, diced
  • 1/2 cup peas (fresh or frozen)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • Salt to taste
  • 3 cups water
  • 2 tablespoons ghee (clarified butter) or oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Wash the rice and dal together in cold water and soak them for about 15 minutes. Drain and set aside.
  2. Heat ghee or oil in a pressure cooker or a large pot. Add the cumin seeds and let them splutter.
  3. Add the chopped onion and sauté until it turns translucent.
  4. Add the ginger-garlic paste and sauté for a minute until fragrant.
  5. Add the diced carrots, potatoes, and peas. Stir-fry for a few minutes.
  6. Add the soaked rice and dal mixture to the pot.
  7. Add turmeric powder, red chili powder (if using), and salt. Mix well to coat the ingredients evenly.
  8. Pour in the water and give it a stir.
  9. If using a pressure cooker, close the lid and cook for about 3-4 whistles or until the rice and dal are cooked and soft. If using a pot, cover and cook until the rice and dal are tender and the water is absorbed (around 20-25 minutes), stirring occasionally.
  10. Once cooked, let the pressure release naturally if using a pressure cooker. Fluff the khichdi with a fork.
  11. Serve the mix veg khichdi hot, garnished with fresh coriander leaves.

You can enjoy this light and flavorful mix veg khichdi on its own or pair it with plain yogurt, pickle, or papad for added taste. Feel free to adjust the spice level and vegetables according to your preference.
