Jackfruit curry is a delicious and popular dish in many cuisines, especially in Southeast Asia. Here's a different way to make jackfruit curry:

Ingredients:

  • 2 cups ripe jackfruit, chopped into bite-sized pieces
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to your spice preference)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1 cup coconut milk
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

  1. Heat oil in a pan or a large skillet over medium heat. Add the chopped onions and sauté until they turn translucent.

  2. Add the ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.

  3. Add the chopped tomatoes and cook until they become soft and mushy.

  4. Add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for a couple of minutes to let the spices release their flavors.

  5. Add the chopped jackfruit pieces to the pan and mix them with the spice mixture. Ensure that all the jackfruit pieces are coated with the spices.

  6. Pour in the coconut milk and give it a good stir. Reduce the heat to low, cover the pan, and let the curry simmer for about 15-20 minutes or until the jackfruit pieces become tender.

  7. Once the jackfruit is cooked and the flavors have melded together, sprinkle garam masala powder over the curry and mix well.

  8. Remove from heat and garnish with fresh coriander leaves.

Serve the jackfruit curry with steamed rice, roti, or any bread of your choice. This flavorful and aromatic curry brings out the unique taste and texture of jackfruit, making it a delightful vegetarian option for your meal. Enjoy!
