Coconut Malai Recipe at Home: Who does not like to taste fresh coconut cream after drinking coconut water? Also known as coconut flesh, coconut cream is a soft jelly-like substance found inside young coconuts. It can be easily eaten by taking it out of the coconut. Coconut cream has many benefits- It is rich in fibre which helps in promoting digestion, It contains lauric acid which helps in improving immunity, Antioxidant content present in coconut cream gives an inner glow to the skin And coconut cream is low in fat and cholesterol which makes the heart healthy. Kheer
Ingredients required- 1 cup coconut cream, 1 litre milk, ½ cup sugar, ½ tsp cardamom powder, 10 almonds, 10 cashews, 10 raisins and a pinch of saffron

Method of preparation- Pour milk into a pan and boil it. Now reduce the flame and let it cook for 20-30 minutes. Keep in mind that you keep stirring it after every two minutes so that the milk does not stick to the bottom. Meanwhile, grate the coconut cream and put it in a nonstick pan. Fry it till it becomes a little dry. Mix it in boiled milk. Now add sugar, cardamom powder and saffron to the milk. Mix and cook for another 10 minutes. This will give the right consistency to the kheer. Lastly, add finely chopped almonds and cashews. Add soaked raisins to the kheer as well. Turn off the gas and let it cool down. If you want to enjoy cold kheer, then let it cool for some time in the fridge or freezer.

Smoothie
Ingredients required- 1 cup coconut cream, 1 cup coconut water, 1 tbsp honey and a few drops of vanilla extract

Method of preparation- Scoop the soft cream of coconut and put it in the blender. Mix coconut water, honey and vanilla essence in a blender. Blend well till smooth. Take out the smoothie in a glass and serve. You can add chopped nuts to the smoothie to make it more delicious.

A type of sweet
Ingredients required- 1 cup coconut cream, 1 cup milk powder, ¾ cup sugar, ¼ cup ghee, ¼ tsp cardamom powder and 2 tbsp chopped cashews

Method of preparation- Put ghee in a pan and keep it on medium flame. Add finely chopped or grated coconut cream and fry till it becomes slightly dry. Now add milk powder and cardamom powder. Add sugar and half a cup of water to another pan, mix and cook until it turns into a one-string syrup. Pour this sugar syrup into the pan containing the mixture of coconut and milk powder. Keep stirring continuously and cook on low flame till the mixture leaves the sides of the pan. Put finely chopped cashew nuts in the mixture and turn off the gas. Now let it cool down. Grease your hands with some ghee and take out small portions from the mixture. Roll between your hands to make laddoos and serve.

Ice cream
Ingredients required- 1 cup coconut cream, 1 cup coconut water, 1 cup heavy cream, ½ cup sugar and 1 teaspoon of vanilla extract

Method of preparation- Scoop the coconut pulp and put it in a blender along with coconut water. Mix it up. Now add heavy cream, sugar and vanilla extract. Blend to make a smooth mixture. Pour the mixture into the vessel and use a stick blender to make the mixture thick and smooth. Pour the mixture into a tin and keep it in the freezer. Let it set for 4-5 hours. After set, take out the ice cream in a bowl and garnish it with fruits and nuts.
