Peel the carrots and potatoes and grate them. Cut the onions into fine pieces. Put all these vegetables in a bowl along with salt, red chili powder, black pepper powder, garam masala, dried mango powder, and carom seeds.

Now mix gram flour with some water. Mix well to prepare a thick mixture. Make sure you do not add much water, as the mixture should be thick and not runny. Lastly, add coriander leaves and mix everything.

Now place parchment paper on the baking tray and take out small balls from the mixture. Place the balls on parchment paper and slide them into the oven. Bake the pakodas at 200 degrees Celsius for 20-25 minutes or until they turn crispy. Serve the pakodas with ketchup, mint chutney and serve hot.
