Tomatoes - 6
Sugar/Jaggery - 3 tbsp
Cumin - 1/2 tsp
Desi Ghee - 2 tbsp
Red chili powder - 1 tsp
salt - as per taste
To make Tomato Launji, first take the tomatoes and wash them thoroughly and wipe them with a clean cloth. After that cut the tomato into small pieces. After this take a wok and keep it on medium flame to heat it on the gas. When the pan becomes hot, add 2 tbsp ghee to it. When the ghee melts, add half a teaspoon of cumin seeds to it. When the cumin seeds crackle, add chopped tomatoes,
Add red chili powder, sugar or jaggery whichever is available and salt as per taste.
Now let this mixture cook on medium flame for 5 minutes. During this, with the help of a ladle, keep stirring the launji in between. Switch off the gas when the tomatoes are well cooked and the launji starts to appear slightly thick. In this way your delicious Tomato Launji is ready. It can be served with roti, paratha or naan by adding green coriander.
