Let's try something new for breakfast today i.e. the delicious and delicious South Indian Medu Vada:

Ingredients: For Sambar:
half cup Arhar dal and tamarind pulp
half cup mixed vegetable (optional)
1 tomato (chopped)
1 onion (sliced ​​lengthwise)
1 tbsp sambar powder
1/4 tsp turmeric powder
one and a half cups of water
2 tsp oil
1 tsp mustard
a pinch of asafoetida
2 whole red chilies
few curry leaves
2 green chilies (cut in the middle)
half tsp jaggery (grated)
salt to taste

To make Vada:
-1 cup urad dal (soaked and water drained)
-2 green chilies (finely chopped)
-a piece of ginger (grated)
-few curry leaves
-2 tbsp coriander leaves (finely chopped)
-pinch asafoetida, salt as per taste
-oil for frying

Method
In a pressure cooker, add lentils, half a cup of mixed vegetables (as desired), tomatoes, turmeric powder, and one and a half cups of water, and cook for 3 whistles.

When the cooker cools down, mash the dal lightly.

Heat oil in a pan and sprinkle mustard seeds, asafoetida, whole red chilies, and curry leaves.

Add green chilies and onions and fry till they become soft.

Add tamarind pulp, jaggery, and salt and cook. After 2-3 minutes add mashed lentils, sambar powder, and one and a half cups of water, and cook till it thickens.

Take it off the flame.

To make Vada:
Grind lentils and a little water in a mixer and grind them.

Mix all the remaining ingredients except oil for frying.

Heat oil in a pan.

Take the paste of lentils with wet hands, pierce the center with your finger and deep fry them in hot oil on low flame until golden brown.

Serve with sambar.
