Potato - 5 (300 grams) Boiled

Peanuts - ½ cup (100 grams) (roasted and coarsely crushed)

Coriander leaves - 2 to 3 tbsp (finely Chopped)

Green chilies - 2 (finely chopped)

Ginger paste - 1 tsp

Black pepper - 8 to 10 (coarsely ground)

Oil for frying

1. Wash and soak 1 cup of sago in 1 cup of clean water for 2 hours. Remove excess water if visible.

Peel the potatoes and mash them finely. Mix sago, rock salt, finely chopped green chilies, ginger paste, coarsely ground black pepper, finely chopped green coriander, and coarsely ground peanuts. Mix all the things well. The mixture for making vadas is ready.

3. Heat some oil in a wok or pan. Take a little mixture and roll it into a round shape and flatten it with the palm. Keep this vada on a plate. Repeat the process until the entire mixture is used up.

4. Drop one vada into the hot oil and check whether the oil is hot or not. If the oil becomes hot, add 3 to 4 more vadas and fry them till they turn golden brown. Take out the fried vadas on a plate covered with kitchen paper to remove excess oil. Fry the rest in the same way.

5. Sabudana Vada is ready. Serve hot vadas with green coriander chutney, sweet chutney, or tomato sauce, and eat.
