If you are getting bored with the evening roti sabzi, then we have come up with the recipe for mixed veg. Mixed Veg Rice is a food item that can be prepared in a very short time and it is also very easy to make.


Necessary ingredients

Rice - 1 cup

Potato - 1

Corn - 1 cup

Onion Chopped - 1

Tomato - 1

Green Capsicum - 1

Carrot - 1

Turmeric Powder - 1/4 tsp

Red Chilli Powder - 1 tsp

Garam Masala - 1 tsp

Rai - 1/4 tsp

Ghee - 2 tbsp

Salt - as per taste



First, take the rice and wash it with clean water. After this, put the pressure cooker on the gas on medium flame and heat 2 tbsp ghee in it. When the ghee becomes hot, add mustard seeds to it. When mustard seeds start crackling, add finely chopped onions and fry till they turn golden in color. When the color of the onion changes, then you have to put potatoes, corn, capsicum, and carrot inside it and cook it well.

When all the vegetables are cooked well, then chop the tomatoes and put them in them, and let them cook again. After this add red chili powder, turmeric powder, garam masala, and salt to taste and let it cook for about two minutes.

Now take rice and drain all the water from it and put it in the cooker. Now put the lid on the cooker and cook it till 2 whistles come. Switch off the gas after the whistle. Open the cooker only after the pressure is released. In this way your delicious Mixed Veg Rice is ready.
